Healthy food for kids: swapping ready meals for home-made healthy food can be easy

I was already a working mum when I got my big promotion at work last year. The kids were 8 and 10 and hearty eaters, but my schedule became so hectic that there was no time to cook healthy food for kids from scratch in the evening. The perfect solution? Ready-meals

…or so I thought!

A friend would pick the boys up along with her children after school, and we would coincide at home just as I was running through the front door. Then it was a case of opening the freezer, choosing the lasagne or the chicken Kiev and sticking the package in the microwave. Hey presto!
With the kids fed and watered, homework done and tucked into bed, I would plop onto the sofa with a glass of wine and a clear conscience that I hadn’t served up corned beef sandwiches and crisps!

Soon, though, even I began to tire of serving up the frozen meals. Plus we began to hear reports of horse meat being used in certain packaged meals! Unbelievable! My kids were not going to eat horse-meat..NO WAY It was time for me to take action.

Fresh food from a working mum

I realised I could cook up a storm of fresh food at the weekend and then freeze individual meals for the week. Bit of a “no-brainer” I can hear you say….

The food would still be frozen, but I would know what the ingredients were, and I could make them tasty and healthy. My new method has made food shopping more enjoyable and, of course, cheaper. It requires organisation, but avoid being a slave to the kitchen on your two days off. But I think I’ve got it down to a fine art!

While the boys are off at football practice on a Saturday morning, I open up the cookbooks – well maybe have a quick glance – and let my creative side loose!

Oh and I’ve found another way of providing healthy meals for your family if you are a working mum: a slow-cooker or, to use its posh name, a crock pot. A great invention!

I am not really a gadget person, but I was browsing around the stalls at the British Ladies Bazaar in December and saw the crock pot. It’s second-hand, but comes with an instruction booklet and recipe cards and you can use it to prepare a lovely dinner for guests or a weekday family meal. It does what it says – cooks slowly during the day so when you arrive home you have a hot meal ready and waiting.
